Broccoli. Broccoli is the most potent source of Glucoraphanin which is converted into active Sulforaphane when digested.
In 1992, research led by Dr. Paul Talalay, Director of the Laboratory for Molecular Pharmacology at Johns Hopkins University School of Medicine (Baltimore, USA), identified a naturally occurring compound found in cruciferous vegetables (such as broccoli) called Glucoraphanin. Glucoraphanin appears to be the key natural compound responsible for the health benefits associated with Broccoli.
Broccoli is the most potent source of Glucoraphanin which is converted into active Sulforaphane when digested. Sulforaphane is thought to be one of the most potent naturally occurring inducers of the antioxidant defence enzymes. It stimulates antioxidant activity to help neutralise the harmful free radicals that may cause damage to cells and tissues. Sulforaphane works like a battery charger, recharging or kick-starting the antioxidant enzymes. The ‘recharging’ effect of Sulforaphane can last up to 72 hours. This ‘indirect’ antioxidant effect lasts longer than the ‘direct’ antioxidant effect. For example Vitamins E and C only work over a period of a few hours after ingestion.
